Place the water, vanilla seeds and scraped half pod in a pan and simmer for 5 minutes. Add the roasted squash and cream, return to a simmer, then take off the heat. Season and discard the vanilla pod.

ASIAN DETOX

serves 2–4

1 litre (34 fl oz) Chicken Stock

2 spring onions (scallions), chopped

1 stalk lemongrass, cut into thirds and then cut vertically

15 g (½ oz) piece ginger, peeled and sliced

½ red chilli, finely sliced

2 tablespoons lime juice

handful of coriander (cilantro), to serve
